Ye Old Beer Battered Fish

Beer Batter.

I know that this recipe is about the most publish anywhere, but just incase, here we go again. besides it will get this section of the website started.

Beer batter is a tasty, quick and easy way to enjoy your fresh catch of fish.

To serve 4 - you will need.

About 800grms of fresh fish fillets.
1 can of Victoria Bitter (or your favorite beer).
1 cup self raising flour.
1 egg - whisked.
Salt and pepper to taste.

Here's how you do it.

First open the can of VB and take a big sip - you wont need it all so don't waste it.
Place the flour in and suitable sized mixing bowl and make a depression in the middle.
Add the whisked egg and start mixing  adding small quantities of beer as you go, until the batter is well mixed and a reasonably thin consistency. I don't like too much batter on my yummy fish.

Cover the batter and allow it to stand for 30 minute, this is important because it makes the batter stick to the fish better when you are cooking it.

Finish off the can of VB. Open another if your still waiting, I usually do.

Dip your yummy fish in the batter and wipe off a lot of the excess on the side of the mixing bowl. Shallow fry in about 10mm of oil (my favorite is light olive oil it's healthier) or deep fry until golden brown.

Serve with whatever you like - it's always good.
